- 2-3 cloves
- 2-3 cardamom pods
- 1 cinnamon stick
- 2 bay leaves
- 3 tbsp ghee or oil
- Salt to taste
- 3 cups water
- Fresh coriander leaves (for garnishing)
Instructions:
- Rinse the rice in cold water and soak it in water for 30 minutes.
- Heat the ghee or oil in a large pan and fry the onions until they turn golden brown. Add the ginger-garlic paste and fry for a minute.
- Add the chicken pieces and fry until they turn brown. Add the chopped tomatoes, green chillies, red chilli powder, cumin powder, coriander powder, garam masala powder, turmeric powder, cloves, cardamom pods, cinnamon stick, and bay leaves. Fry the spices for a minute.

- Drain the soaked rice and add it to the chicken mixture. Mix well.
- Add 3 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the pan with a lid, and cook for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Turn off the heat and let the biryani sit for 5-10 minutes. Fluff the rice with a fork and garnish with fresh coriander leaves.
